Once you have a sense of where the pattern is coming from, these five tactics tend to work well across the board.
Most children rush because they're racing to a finish line. Move the finish line. Finishing means solving and checking, in that order. A simple sticky note prompt works well for younger children:

Pair the close of a session with a small transition: a snack, a few minutes of free time, something that marks the end without rewarding speed. The most important change is to praise the behavior, not the pace.
"I noticed you wrote out every step." lands better than "You finished so fast."
